                      Butternut Squash au Gratin

                      This week’s new tester recipe was Butternut Squash au Gratin from Kraft Foods. I saw it in their monthly magazine and thought it looked like something my family would enjoy. I am always looking for new sides and I love squash, but couldn’t recall many dishes where I had tried Butternut Squash other than soup. My husband loves anything au Gratin, so I added it to my list of dishes to try, without reading the whole recipe. I purchased all the ingredients and set out to make it weeks ago. Then I realized the recipe takes a total of one hour and fifteen minutes to complete according to Kraft Foods, so it is not exactly mom-friendly.  Since I haven’t really wanted to put that much time into any recipe here lately, especially a side dish, the poor butternut squash sat on my counter for weeks.                       Halloween Pizza Ideas for Kids

                      Halloween is the perfect time to get together with family and friends. These pizza recipes are sure to satisfy a variety of goblins, ghosts and ghouls who gather around your Halloween table. Whether you serve them up during a Halloween party or right before heading out to trick or treat, these pizza choices will add fun to your Halloween celebration.

                      Individual Mummy Pizzas

                      These pizzas are perfect for kids because they can use the ingredients provided to make their own. Supply the bottom and top halves of bagels or English muffins, along with pizza sauce, mozzarella string cheese, pepperoni and sliced olives. Top each bagel or English muffin half with pizza sauce, then tear apart the string cheese and use the layers to create a mummy face. Cut the pepperoni and sliced olives and use them to construct the mummy’s eyes and mouth, then pop them into the oven at 350 degrees until hot and bubbly.

                      Mummy Pizza Dogs

                      This recipe is super easy and also fun for kids. Roll out crescent roll or pizza dough, cutting it into thin strips about 1” wide – the length of the strips will depend on whether you use hot dogs or Lil’ Smokies for this recipe. Wrap each hot dog or sausage in the dough so that it overlaps to look like a mummy. Lay each mummy pizza dog on a cookie sheet and bake at 375 degrees for about 10 to 15 minutes. Create a face using a toothpick dipped in ketchup or mustard, drawing carefully onto the dough when cooled.

                      Easy Pumpkin or Jack-o-Lantern Pizza

                      This pumpkin pizza refers only to shape – there’s no actual pumpkin included in the recipe. Roll out pizza dough into small rounds for individual pumpkin pizzas, or use pre-made pizza crusts or pita bread for the base. Top with sauce and grated mozzarella cheese. Use shredded cheddar cheese to add texture to this work of art. To create a jack-o-lantern pizza, provide a variety of toppings to make different facial features, such as sliced mushrooms, pepperoni slices, zucchini cut into triangle-shaped pieces, spinach leaves that can be cut as desired, and sliced olives. Gather the kids together so that they can make their own yummy creations, then bake at 425 degrees for about ten minutes or until these pizzas are ready to eat.

                      Simple Ghost Pizza

                      This ghost pizza is easily made from a section of French bread or baguette that’s been sliced in half lengthwise and cut to a desired length. After the sauce has been spread on the surface, pile on the mozzarella cheese, along with spare toppings to create a ghostly face. Line up these spooky pizzas onto a baking sheet and bake at 425 degrees until cheese is melted and bubbly.

                      5 Easy-to-Make Quality Meals

                      Let’s face it, everyone is extremely busy. You have school, work, kids, chores and other important things to look after or do in any given day. The last thing on your mind is when or how to prepare food when your day has a break, so the usual outlet is fast food or other means that are just as unhealthy.

                      Below are five meals that you can prepare in a short period of time, but they taste delicious and are quick and easy. 

                      1. Chicken Parmesan Hero
                      No matter how big your family is or how picky they are, people can always count on the combination of sauce, cheese and chicken to fill everyone up. Not only can you prepare this meal for any number of people, it can all be done cheaply, and you can probably get everything on the table and ready to eat in less than 30 minutes.

                      2. Pasta and Meatballs
                      Likely a popular meal in many households, this dish couples the delicate texture and taste of meat, pasta and sauce all in one. All you need to do is boil pasta, roll some meat into ball form and then throw some sauce on top of it all. Even the busiest people can find 30 minutes or less to cook this dish. 
                       
                      3. Shrimp Scampi
                      Throw shrimp, scampi sauce of your choice, some sort of pasta already boiled into a frying pan and you’re all set. You can make this in less than 15 minutes if you’re good, but even 20 minutes is the max amount of time it could take for everything to finish and be ready to eat. 

                      4. Rib-eye Steak and Vegetables
                      This meal could literally take about ten minutes to cook,  depending on the size of the steak or steaks you’re cooking. Fire up your grill and get its temperature as high as possible, and when it finally gets to proper temperature, season up yoursteakswithsaltandtossthem on. Cook each side  for three or four minutes, cook up your vegetables at the same time, and your  meal is done in no time.

                      5. Baked Ziti
                      You could feed an entire family with this meal, and it’ll only take about 45 minutes to prepare and cook. Two boxes of pasta, two jars of sauce, a bag of mozzarella cheese, a large container of ricotta cheese and you’ll have the materials necessary to feed five or more people.  Give it a shot!

                      It just goes to show that you don’t need to sacrifice the quality of your food because of lack of time. While it might seem easier to grab some fast food down the street, you could have already been done cooking and ready to sit down and eat if you would have prepared one of these affordable, quick and simple meals instead. Next time you’re in a rush, just remember that you always have time for a delicious and healthy meal.

                      One of my friends was talking about using eggplant in her Chicken Tava recipe when she made it for her vegetarian friend. I told her if it turned out good, to let me know, but in the mean time, it made me crave eggplant parmigiana. If your family is not familiar with the large purple vegetable, this is a great dish to introduce this vegetable.  It was one of those vegetables as a kid I never wanted to try, but when my grandmother convinced me to try it, I loved it.
